WORK EXPERIENCE

09/2023-11/2023

Pfizer, Intern Researcher

  • Studied domestic nutritional development situation, particularly the R&D of healthy food.

  • Invented new healthy food product based on marketing research, food policy, and food laws.

  • Maintained and improved the nutrition database and compared nutrition trends at home and abroad.

  • Concluded that the company needed to develop a localized and tailored database suiting the national situation.

07/2023-09/2023

By-Health, Nutrition Education Intern

  • Promoted the newly developed healthy foods, and instructed drugstore clerks on the importance of healthy food and how they can introduce the products to the target group.

  • Designed marketing campaigns, and researched customer psychology, user demand, and competitors.

  • Cooperated with companies to promote nutrition, and independently designed nutritional popularization lectures.

RESEARCH EXPERIENCE

10/2023-08/2024

FDA NARMS (National Antimicrobial Resistance Monitoring System) Program, Student Researcher under Research Scientist Dr. Xunde Li

  • Studied antimicrobial resistance in the bacteria found on retail meats sold in Southern California and Hawaii.

  • Media making under NARMS protocol: both broth and agar (GSP, BHI, MacConkey, EN, Bolton), and conducted quality control of culture media.

  • Data recording and collection on the presence of Vibrio, Aeromonas, E. coli, Enterococcus, and Campylobacter on meat or seafood samples from Hawaii and CA.

  • Indole/Catalyst/

  • Incubation and Storage of different categories of bacteria on media, and segregation of biohazard waste.

  • Have had opportunity to take over a project individually [DairyStec: study 0157 and STEC] for one month

07/2023-08/2024

UC Davis Nutrition Department Lonnerdal Lab, Student Researcher under Dr. Bo Lonnerdal

  • Dr. Lonnerdal’s research investigated two areas: factors that impact pediatric nutrition and the regulation of trace element metabolism, particularly during the unique physiological conditions of pregnancy, lactation, and infancy.

  • Studied the property of lactoferrin and its binding capacity to iron under different times and temperatures to see if it functions well in the infant milk formula.

  • Used experimental mice to test the presence and function of Lf; performed western blot, NativePAGE, and ELISA assay, and maintained Human cell lines, such as changing cell culture, and made culture media.

  • Prepared buffers, such as 1xPBS, 1xTBS, Western blot running and transfer buffers, and NativePAGE fix solution.

  • Performed RNA isolation from cell lysis, RNA purification using the Zymo kit, and measured RNA concentration with NanoDrop.

  • Excellent in using laboratory pipets, Bio-Rad ChemiDocMP Imaging system, and embedded tissues using tissue- tek TEC 6, microtome using LEICA RM2255.

01/2023-03/2023

Alcohol Consumption Impacts on Type II Diabetic Patients’ Insulin Sensitivity and Biomarkers, Student Researcher under Dr. Mary M Flynn (Brown University)

  • Emphasized Type II Diabetes (T2D) in the research project, a chronic disease caused by insulin resistance, the pancreatic β-cell that is responsible for regulating insulin in T2D patients does not function properly and fails to store glucose, which induces insulin resistance in several organs.

  • Researched the effect of alcohol on T2D patients by comparing the changes in biomarkers between the no-alcohol consumption group and the no change on alcohol intake group to see if giving up alcohol improves the biomarkers related to T2D and the overall health status of T2D patients.

08/2024-present

Validation of Newly Developed Database on Dietary Heme Iron Calculation and the associaiton between dietary heme iron intake and iron status biomarkers

  • Conducted data integration and statistical analysis using R to compare heme iron intake values derived from two estimation methods (the traditional Monsen ratio and a newly developed food-specific database).

  • Contributed to validation and interpretation of dietary data across diverse population subgroups.

  • Strengthened analytical and critical-thinking skills by bridging dietary intake modeling with biochemical interpretation of serum ferritin and hemoglobin data.

  • Aim to refine iron intake assessment methods to enhance dietary surveillance and clinical application in evaluating iron deficiency risk.

Skills & Expertise

  • Please see other sections under Documents and Projects to learn more about my skills related to nutrition and dietetics.

  • Language: Mandarin Chinese (Native), English (Proficient).

  • Certificates: ServSafe® Food Protection Manager, ServSafe® California Food Handler, Mouse Handling Video and Quiz, Lab Safety for Support Personnel, Aerosol Transmissible Diseases, Animal Care and Use 101, PPE: Personal Protective Equipment, UC Laboratory Safety Fundamentals, Safe Use of Biological Safety Cabinets, UC Davis Medical Waste Management (obtained these certificates as required for lab research)

Interests

  • Cooking: Meditation for me. : )

  • Reading: I believe book is where we can truly relax ourselves and let our imagination come true. Having the opportunity to glance into the intelligent minds of those great people is thrilling. I especially love philosophy books and magical realistic books.
